As most of you know, a few weeks ago Walker wrapped up his job as a Briefing Attorney for the 11th Court of Appeals in Eastland, TX. To celebrate the ending of that chapter and the beginning of the next (he will now be a Law Clerk in Sherman, TX) we decided to take a trip to the Caribbean for some relaxation and fun in the sun! Keep reading for a full play by play of our amazing time at Catalonia Royal La Romana, an all-inclusive hotel in La Romana, Dominican Republic.
Day 1 in the Dominican Republic:
We arrived at the beautiful and modern resort and were greeted with delicious welcome cocktails and chilled towels, which tasted and felt amazing and refreshing!

Check in was a breeze and we were escorted to our amazing suit by Gino, one of the sweetest and most helpful bellmen Walker and I have ever encountered. Our two-story suite had two bathrooms, the most comfortable bed we had ever slept in and a private infinity pool overlooking the main pool. It was beautiful!

Starving from our day of traveling, we hit the resort’s beach bar for some sushi and cocktails.

For dinner that night we decided to go to Terrace, the resort’s a la carte beach front tapas restaurant. Located right on the sand, this restaurant was very romantic and the perfect way to start our vacation. We enjoyed seared tuna, beef tartar, mussels, fried manchego cheese, tempura asparagus and chocolate cake for dessert, which all paired perfectly with our crisp New Zealand wine.

After dinner, Walker treated himself to a cigar and we sat in a cabana by the pool, sipped after dinner drinks and listened to a local singer and her accompanying pianist. She could have easily been mistaken for Selena! I sang along and we were both blown away by her amazing voice and talent.
Day 2 in the Dominican Republic:
We woke up and ordered coffee and pastries to our room. We sipped and snacked in our comfy bed and enjoyed a relaxing morning.

For breakfast we dined at Thalassa. Thalassa is the resort’s Mediterranean restaurant that serves both buffet and a la carte breakfast and also a la carte dinner.

Next we hit the beach to tan, read and sip on mojitos! The water was crystal blue, warm and refreshing!

For lunch we went to Terrece again. We started with yummy mozzarella sticks. Walker had a mixed seafood grill and I had a club sandwich and avocado salad. We sipped on minty mojitos and took in the beautiful ocean views.

After lunch we had cocktails at the swim up bar at the pool and retired to our private pool that evening to watch a beautiful sunset.

That night we took a long walk on the beach before dinner and took in the beautiful ocean views. For dinner we decided to eat at the resort’s a la carte Italian restaurant, Toscana. Located right on the sand, it had beautiful views of the ocean. We sipped on red wine and feasted on beef carpaccio, caprese, osso bucco and terramissu. Yum!

After dinner, we sipped cointreau and gazed at the beautiful, starlit sky.
Day 3 in the Dominican Republic:
We rose early that morning to watch the sun rise and took a final dip in the beautiful ocean at Catalonia Royal La Romana.
