Earlier this month I took Walker on a Bar trip to Belize and we had the most wonderful, relaxing and exciting time! After 4 adventurous days in San Ignacio, we headed to Ambergris Caye for some fruity cocktails, R&R, and fun in the sun.

Day 1:
After a short, 15 minute, island hopper flight, on Tropic Air, we landed in San Pedro and were greeted by Nathan, the El Secreto boat captain, with ice cold beers in tow. Nathan sailed us through the beautiful turquoise waters of Ambergris Caye to El Secreto Resort, which is only accessible by boat. We were welcomed by Miriam, ice cold towels, and a specialty frozen cocktail.
We checked into our massive thatched roof suit complete with private outdoor shower and private infinity Jacuzzi, overlooking a beautiful lake. Once we were settled in, we hit the bar! We feasted on freshly caught tuna sandwiches and cocktails (vodka and freshly made watermelon juice for me and Miami Vices for Walks) and were waited on hand and foot by the gracious bartender, Etnee.
After lunch, we spent the day lounging on hammocks at the resorts breathtakingly beautiful pool.
For dinner that night, we started with beef carpaccio, sipped wine, and enjoyed the beautiful sound of waves crashing at the hotel’s beach front restaurant. I had grilled lobster and Walker had the most amazing snapper I’ve ever tasted!
After dinner, we enjoyed cocktails in our private infinity Jacuzzi.

Day 2:
We started the day off right with an amazing Belizean breakfast and spent the morning relaxing at the pool. After a lunch of freshly caught fish sandwiches, Walker and I took out the resort’s kayak and rowed a few minutes to a nearby reef. We borrowed El Secreto’s snorkel gear, dropped anchor, and did some snorkeling.
Later that afternoon Walker tried some paddle boarding, while I read in a hammock on the beach and watched him.
Once we freshened up for the evening, we enjoyed happy hour at the bar.
For dinner that night, we had lobster ceviche and lobster bisque.

Day 3:
We woke up to freshly made watermelon juice waiting for us on our lake-front deck, which we enjoyed in our cozy robes.
Later that morning, we were picked up by Manny with Seakarus Fishing Tours and began a day packed with adventure! After catching live bait, we set off for deep sea fishing. Walks needed far less help than I did getting the hang of deep sea fishing but Manny and Cliff were incredibly patient and helpful. Walker caught two red snapper and three champagne snapper. I caught two shark suckers and one trigger fish and we both enjoyed sipping on rum punch the entire time!
After fishing, we went lobster diving in the reef and speared 3 lobsters! We were pretty impressed, to say the least.
Once we’d caught enough for lunch and dinner, we docked at Basil Jones beach and our guides grilled up our freshly caught fare, while we continued to sip rum punch. Lunch was beyond amazing and we couldn’t have had a better time with Manny and Cliff.
Once we were full and happy, we went back to El Secreto and relaxed at the pool.
For dinner that night, the resort’s chefs grilled up the extra snapper and trigger fish we had caught that day and we dined like royalty!
Day 4:
After yet another amazing beach-front breakfast at El Secreto, we relaxed on our lake front-dock before heading to the airport.
I got to sit in the cockpit on our flight back to the mainland, which was both exciting and slightly terrifying!
