Bikini Season “Pasta”


Bikini season is upon us, which means time to start eating extra healthy!  Today I am sharing a recipe that is healthy, but tastes so great you’ll think your cheating on your diet!  Zucchini “noodles” are a great substitute for pasta and this greek yogurt sauce taste just like Alfredo sauce!


Ingredients:
3 zucchinis
2 garlic gloves, chopped finely
1 shallot
1 TSP EVOO
1 package of Italian turkey sausage
1/2 cup sun dried tomatoes
1 cup nonfat greek yogurt
1 TSP fresh parsley

Directions:
Using a spiralizer, make “noodles” from the zucchini
In a sauce pan heat EVOO over medium heat
Sauté the shallots and garlic until translucent, about 5 minutes
Add the sausage and cook while breaking the meat into crumbles
Before adding the sundries tomatoes thoroughly blot them with a pace towel to remove the excess oil
Next, add the zucchini and cook for 5 minutes stirring constantly
Remove the pan from the heat and add the green yogurt Mix until the yogurt is completely incorporated
Serve and top with fresh parsley
