Today is the first Friday of lent which means no meat on Fridays for the next couple weeks. So I’ve been going through all my old recipe notebooks in search of easy, healthy and delicious fish recipes. Catholic or not, this crock pot poached salmon recipe is so simple and so healthy.

This is such a quick crock pot recipe you can throw the salmon in in the morning and by the time you’re ready for work it’s done! Just put it in the fridge and dinner is waiting for you when you come home from work.
I love making a salad with this poached salmon. Just add lettuce, kalatama olives, capers, a chopped hard boiled egg and your vinaigrette of choice and you have yourself a quick and low carb salmon niçoise salad.
Walker is lukewarm on cold salmon so when I make this for him I serve it straight from the crock pot so it’s hot paired with roasted fingerling potatoes- toss potatoes in olive oil, S&P and your favorite herbs and bake at 425° for 20 minutes- and a veggie. Easy peasy!
Ingredients:
Salmon fillet
2 lemons
S&P
Dried thyme
Water
Directions:
Cut 2 lemons into thin slices
Line the bottom of your crock pot with the lemon slices
Top lemons with thyme
Add just enough water to the crock pot to cover the lemons
Place salmon seasoned with S&P on top on the lemons
Cook on low for 1 hour to an hour and 15 minutes
