I’ve never met a human who loves eggs as much as Walker does! The man could happily eat them for every meal! Me? Not so much. BUT this egg dish is so good even I love it! Eggs are cheap and healthy making them a great go to main ingredient. This breakfast for dinner recipe has been on repeat in our house and I hope you like my sweet potato shakshuka as much as Walks and I do.
Ingredients:
1 Tbsp EVOO
1 cup sweet onion, chopped
2 tsp garlic, finely minced
1 tsp cumin
1 tsp smoked paprika
2 cans Mexican style stewed tomatoes
1/2 cup sweet potato, cubed
5 large eggs
1/4 cup flat leaf Italian parsley, chopped
Directions:
Heat cast iron skillet over medium heat
Once skillet is hot add oil, onion and garlic
Stir and cook for 5 minutes
Add cumin and paprika
Stir another minute
Add sweet potato cubes and cook for 10 minutes
Add stewed tomatoes and simmer for 5 minutes
Crack eggs into mixture leaving space between each
Let eggs simmer for 10 minutes, or until white is set and yolk is still soft
Top with chopped parsley and serve immediately with naan
