Avocados are one of my all time favorite foods and since Cinco de Mayo is just around the corner I’m sharing a perfect recipe- grilled avocados! This is a great starter or grill up some shrimp and make it an entree!
Ingredients
3 ripe avocados
EVOO
For the Grilled Avocado Toast:
3 grilled avocados
2 cloves garlic, minced
2 tomatoes, chopped
juice, 3 whole limes
rock salt
1/2 c Cotija cheese
1 tsp cilantro, chopped
S&P
Directions
Spray grill pan with non-stick cooking spray and heat to medium high heat
Cut avocados in half and remove pits
Brush inside half of each avocado lightly with olive oil and season with S&P
Place face down on grill-pan for about 5 minutes pressing down occasionally to ensure grill marks are created and heat penetrates
Meanwhile mix tomatoes, garlic, lime juice and cilantro in a bowl
Remove avocados from grill pan
Top with tomato mixture, cheese, rock salt and EVOO
Serve with tortilla chips
