It’s officially what I like to call “snacking season”. Football season started a few weeks ago which means hours in front of the TV while Walker, I mean we, watch football, tailgating and watching the games at bars. In just a few short weeks the holiday season will kick off with Halloween, followed by Thanksgiving, then Christmas then New Years, which means holiday party after holiday party. What do all these events have in common? Munching on appetizers which are probably accompanied with a few adult beverages as well. Calories can really add up when you are mindlessly eating while watching TV or while nibbling at a social gathering. So today I am sharing a healthy appetizer recipe that’s perfect for snacking season.
This healthy Spinach and Kale Dip is a total winner and will keep you in the same jeans once 2017 rolls around. This is a great healthy tailgating recipe and also a perfect calorie conscious holiday appetizer. Serve this healthy dip with your favorite bread or crackers and you’re set!
Healthy Spinach and Kale Dip Recipe:
Ingredients
1 (17 ounce) container of 2% Greek yogurt
3 tablespoons light mayonnaise
1 cup kale, finely chopped
1 cup spinach, finely chopped
4 scallions, finely chopped
1/3 cup water chestnuts, finely minced
1/3 cup red bell pepper, finely minced
1/3 cup carrot, finely minced
4 cloves garlic, finely minced
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon fresh dill
1/2 teaspoon black pepper
Directions
Combine all ingredients in a bowl and mix well. Refrigerate for at least a two hours before serving. Taste and season with more salt and pepper if needed. Serve with your favorite bread, crackers or chips.
