Walks LOVES eggs. I’ve actually never met a human who enjoys eggs as much as he does. I however am so-so on them. I wanted to come up with a recipe that includes the food at the base of his food pyramid that I’d enjoy too and vuala- Italian style breakfast for dinner was born.
Anything is amazing with a hearty tomato sauce and yummy garlic bread. These baked eggs will be a crowd pleaser for breakfast for dinner or even a weekend brunch. Enjoy!
INGREDIENTS:
2 tablespoons EVOO
1/2 an onion, chopped
3 cloves garlic, minced
1/2 teaspoon dried red pepper flakes
S&P
1/2 a jar of your favorite tomato sauce
6 eggs
2 oz fresh mozzarella cheese
fresh basil
DIRECTIONS:
Preheat your oven to 425 degrees.
In a cast iron skillet, heat EVOO over medium heat.
Add onions and garlic and for 10 minutes.
Add a half a jar of tomato sauce.
Bring up to a light boil.
Remove pan from heat and crack eggs one at a time on top of the sauce mixture.
Add slices of mozzarella.
Bake in oven for 20 minutes, or until eggs are set.
Top with fresh basil and serve with crusty garlic bread.
