Moroccan Inspired New Years Eve Dinner

Are you hosting a dinner party for New Years and have zero idea what to make?  If you want simple recipes that will wow and impress your guests, look no further.  I’ve planned a menu for a Moroccan inspired New Years Eve that is sure to impress all in attendance.

Moroccan Chicken
Ingredients:
1/2 cup olive oil
1/2 cup red wine vinegar
1 cup pitted prunes
1/2 cup pitted Spanish green olives
1/2 cup capers with a bit of juice
6 bay leaves
1 head of garlic, peeled and finely diced
1/4 cup dried oregano
Coarse salt and freshly ground black pepper, to taste
8 chicken breast, pounded thin
1 cup brown sugar
1 cup dry white wine
1/4 cup fresh Italian flat-leaf parsley, finely chopped
Directions:
Preheat the oven to 350°F.
Combine the olive oil, vinegar, prunes, olives, capers and juice, bay leaves, garlic, oregano, and salt and pepper in a large bowl.
Add the chicken and stir to coat.
Cover the bowl and refrigerate overnight.
Arrange the chicken in a single layer in one or two large, shallow baking pans and pour the marinade over evenly.
Sprinkle the chicken pieces with the brown sugar and pour the white wine around them.
Bake for 30 minutes.
Transfer the chicken, prunes, olives, and capers to a serving platter.
Toss with chopped parsley

Quinoa
Ingredients:
Quinoa
Chicken broth
Mint
Golden raisins
Thyme
Shallot
Directions:
In a sauce pan saute one chopped shallot.
In the same sauce pan leaving the shallots in the pan, prepare quinoa according to package. Use chicken broth instead of water.
Once quinoa is prepared toss in raisins, chopped mint, thyme, S & P.
Transfer to serving tray.

Grilled Zucchini
Ingredients:
Zucchini
Olive oil
Crushed red chili flakes
S & P
Mint
Goat cheese
Balsamic reduction
Directions:
Using a mindoline thinly slice zucchini into ribbons.
In a bowl marinade ribbons with olive oil, chili flakes, S & P.
Preheat grill pan for medium-low heat and lightly coat with EVOO.
Cook for 3-4 minutes per side.
Transfer to serving plate.
Top with balsamic reduction, mint and goat cheese.
