I love citrus flavors in spring and summer.  They are so light and fresh and pair perfect with a chilled class of Pinot Grigio.  These two recipes are lemony perfection and perfect for these warm months.

CROCKPOT SALMON
Ingredients:
Salmon fillet
2 lemons
S&P
Dried thyme
Water

Directions:
Cut 2 lemons into thin slices
Line the bottom of your crock pot with the lemon slices
Top lemons with thyme
Add just enough water to the crock pot to cover the lemons
Place salmon seasoned with S&P on top on the lemons
Cook on low for 1 hour to an hour and 15 minutes

LEMONY POTATOES
Ingredients:
1 1/2 pounds fingerling potatoes
Juice of 2 lemons
1/4 tablespoon dried oregano
1/4 tablespoon dried parsley
1/4 tablespoon dried rosemary
2 tablespoons EVOO
S&P
2 clove garlic, minced

Directions:
Preheat the oven to 400 degrees.
Mix lemon juice, garlic, EVOO, herbs and potatoes in a bowl
Place the potatoes on a baking sheet.
Roast until tender and browned, about 1 hour, stirring the potatoes twice during cooking.
