If you’re looking for a simple meal that your guest will think you slaved over all day, look no further! This chicken milanese if perfect for wowing your guest or even an easy week night meal.
I made this for Walker and my anniversary dinner a few months back with polenta and a spinach salad and we loved it!
INGREDIENTS
Chicken:
1/3 cup all-purpose flour
2 eggs, beaten
1 1/4 cups Italian bread crumbs
2/3 cup grated Parmesan
2 teaspoons dried basil
1 teaspoon dried thyme
1/2 table spoon crushed red chili peppers
4 (6 to 8-ounce) boneless and skinless chicken breasts, pounded extra thin
S & P
1/3 cup vegetable oil
Sauce:
1 tablespoon EVOO
2 fennel bulbs, thinly sliced
2 1/2 cups cherry tomatoes, halved
S & P
1 teaspoon dried thyme
1/2 cup mascarpone cheese
DIRECTIONS
Chicken:
Preheat the oven to 150 degrees F.
Line a baking sheet with a wire rack.
In 3 bowls, add the flour, seasoned with S & P to 1, the beaten eggs to another and combine bread crumbs, parmesan, basil, chili peppers and thyme in the third.
Thinly pound chicken breasts to 1/4 inch think using a meat mallet.
Season both sides with S & P.
Lightly coat chicken pieces in the flour to coat.
Dip into the beaten eggs.
Coat the chicken with the bread crumb mixture, pressing gently to insure the mixture sticks to the chicken.
In a large, nonstick saute pan, heat the vegetable oil over medium heat. Add 2 pieces of the breaded chicken into the oil and cook until light golden brown, about 3 to 4 minutes on each side.
Transfer to the prepared baking sheet and keep warm in the oven.
Repeat with the remaining chicken.
Reserve the cooking juices in the pan for the sauce.
Sauce:
In the same pan, add EVOO.
Add the fennel and cook for 5 to 6 minutes.
Add cherry tomatoes, S & P and thyme.
Cook until the tomatoes are tender.
Remove the pan from the heat and add the mascarpone cheese. Stir until the mixture is creamy.
Finish with S & P to taste.
Transfer the chicken to a serving platter and spoon the sauce over the top before serving.
