Crockpots are one of life’s greatest treasures! If you don’t have one, run, don’t walk to get one! You can make the most delicious meals in them. You basically throw stuff in and like magic a few hours later you have yourself an award winning dish.
This curry recipe is SO EASY! If you can use a can opener and can rough chop some veggies you’re already well on your way to success with this curry.
INGREDIENTS
4 chicken breasts
3/4 cup salsa
1/4 cup peanut butter
2 tablespoons lime juice
1 tablespoon soy sauce
1 teaspoon ginger
2 tablespoons cilantro, chopped
1 red bell pepper, chopped in 1 inch chunks
1/2 eggplant, chopped in 1 inch chunks
1/2 yellow onion, chopped
1 cup canned bamboo roots
DIRECTIONS
Place chicken in crockpot.
Mix remaining ingredients except cilantro and pour over chicken.
Cover and cook on low heat setting 8 to 9 hours.
Top with cilantro and serve with rice.
