Walker and I love Indian food. We get Indian takeout at least twice a month and overtime we do we have to get a double order of samosas because we love them so much! A few weeks ago I wanted to try making them myself and came up with this easy recipe. I paired the samosas with curried butternut squash soup and the meal was a home run!
Samosa Ingredients:
1 large can of whole potatoes, cubed
1 teaspoons coriander
1 teaspoon turmeric
1 teaspoon cumin
1/2 teaspoon red chili flakes
1 teaspoon dried cilantro
1 package of ground beef
1/2 cup frozen peas, thawed
1/2 yellow onion, diced
2 sheets of frozen pie dough, thawed
Samosa Directions:
Preheat oven to 400 degrees.
Over medium head cook onions, ground beef and seasonings until completely cooked.
Add peas and potatoes.
Mix well and remove from heat.
On a flowered surface roll out dough.
Using a wine or martini glass upside down create 5-6 rounds of dough in each sheet.
Leaving a trim spoon 1.5 to 2 tablespoons of filling onto half of the round. Fold other half over creating a moon like shape and seal shut using a fork.
On a baking sheet cook for 20 minutes. Serve with mint chutney. Recipe below.
Mint chutney:
In a food processor combine 1 cup mint leaves, 1 cup cilantro, 1/2 tablespoon ginger, juice of 2 limes and 2 tablespoons EVOO. Blend until well combined.
