As most of you know I have been on the Keto Diet for a few months now and I have seen so much success with it so far! I will be doing a full blog post about my weight loss journey in a few weeks once I meet my first goal so stay tuned for that! But today I wanted to do a little Insta Roundup of all the Keto Diet recipes I’ve posted to Instagram lately.

Keto Fried Goat Cheese
In a mixing bowl beat 1 egg. Put 1/2 c almond flour on a plate and season with salt. Slice a log of goat cheese into 1/2 inch slices. Slice by slice, dip cheese into egg, flour, back in egg and back in flour and set aside. Do this with each piece. Put 3 Tbsp EVOO in a pan on medium high. Once oil is hot, cook cheese for 3-4 minutes on each side.
Keto Ranch Dressing
In a mixing bowl mix ¼ cup mayonnaise, ¼ cup sour cream, ½ cup heavy whipping cream, ½ tablespoon dried parsley, ½ teaspoon dried dill, ½ teaspoon garlic granules, ½ teaspoon onion powder, ¼ teaspoon basil
and ¼ teaspoon pepper.
Keto Chicken Nuggets
Cut chicken breasts into 1.5-2 inch pieces. Beat two eggs in a bowl. Put 1 cup of almond flour on a plate and season with salt and garlic powder. Piece by piece, dip chicken pieces into egg, flour, back in egg then back in flour. Set aside. Heat 1/4 cup veggie oil in a pan on medium heat. Once oil is hot, cook chicken pieces for 5 minutes on each side.
Kept Cheese Crisps
Preheat over to 350°. Line baking sheet with parchment paper. Drop 1-2 Tbsp (depending on how large you want your crisps) of shredded cheese about 2 inches apart on a baking sheet. Sprinkle with your favorite seasonings. Bake for 5-8 minutes. Remove from baking sheet and place on cooling rack.
Keto Sausage Kolaches
Preheat oven to 400°. In a microwave safe bowl microwave 2.5 c shredded mozzarella cheese and 2 oz cream cheese for 2 minutes. Stir until mixed well. Add 2 eggs, 1 Tbsp baking powder and 1.5 c almond flour. Mix well. With wet hand roll dough into long pieces. Wrap hotdogs and place them onto a parchment lined baking sheet. This will make 6.
Keto Bagels
Preheat oven to 400°. In a microwave safe bowl microwave 2.5 c shredded mozzarella cheese and 2 oz Cream cheese for 2 minutes. Stir until mixed well. Add 2 eggs, 1 Tbsp baking powder and 1.5 c almond flour. Mix well. With wet hand roll into bagel shapes and sprinkle with everything seasoning if desired. Bake on a parchment lined baking sheet for 10-15 minutes. Yields 6 bagels.
Keto Pizza
Microwave 1.5 c mozzarella cheese and 2 Tbsp cream cheese in a microwave safe bowl for 30 seconds. Stir well and add 1 beaten egg and 3/4 c almond flour. Spread dough on a greased baking sheet and sprinkle with garlic salt. Bake at 425° for 10 min. Remove from oven and add desired toppings. Bake another 10 min.
Satuée 1/4 an onion in 2 Tbsp EVOO on medium high heat until golden. Add 2 lbs spicy ground Italian sausage and cook completely. Add 1 tsp of salt and 1 tsp red chili flakes. Add 32oz of chicken stock. Bring pot to a simmer and add 2 cups of roughly chopped kale. Remove from heat and add 16oz heavy whipping cream
