Summer is just around the corner which means the best fruits are ripe and ready to be featured in fresh, light and amazing ways!
I love incorporating fruit in my salads- especially during the spring and summer months. I feel like it give any green salad a refreshing pick me up.
Today’s watermelon arugula salad if the perfect partner to any summer dish.
INGREDIENTS:
1/4 of a watermelon cup into spears
3 cups of arugula
1/8 of a purple onion, sliced
1/4 cup of feta crumbles
S&P
Balsamic Reduction
DIRECTIONS:
On your serving dish place arugula and water melon.
Top with onions and feta.
To complete, add a drizzle of balsamic reduction. It’s really that easy!
