Salmon is a go to protein in my house. Its easy, healthy and Walker and I love it! I tried this recipe our a few weeks ago during Lent and we absolutely loved it so I wanted to share it with you!
3-4 salmon filets
1 lemon cut in 6 wedges
2 oz nonfat Greek yogurt
4 oz reduced fat cream cheese
3 tablespoons fresh dill minced
1 cup lemon juice
1 shallot, chopped
Pre-heat the oven to 400 degrees.
Coat salmon with EVOO and season with S&P
Bake for 12-15 minutes
Meanwhile, sauté shallots in EVOO for 5 minutes on medium heat
Add lemon juice to the shallot mixture
Remove from heat and add dill, Greek yogurt and cream cheese
Remove salmon from oven, plate and top with dill sauce and extra dill if desired
