It’s football season… which means amazing food and all Walker wants to talk about is fantasy football. Now if you’re anything like me, besides wanting to look cute at tailgates, you don’t really care about the sport.

However, my spicy 8 layer bean dip is something (besides Tom Brady) that you can fantasize about this football season. So while your man is complaining about a holding call… eat this dip and you and your honey will be happy campers.

I made this for Walker and my anniversary dinner a few months back with polenta and a spinach salad and we loved it!

Chili: The Perfect Halloween Meal

Vegetarian? Pass on the meat and add extra veggies or soy chorizo.  Watching your girlish figure? Use ground turkey and turkey sausage instead.  Want a chunkier hardier chili? Add less tomato juice.  Not a big fan of spicy foods? Don’t add the cayenne. It’s really that simple.

Below is a list of ingredients I put in my chili.  Like I said before, add what you like, pass on what you don’t, and put in as much or as little of each ingredient.

INGREDIENTS

Ground beef
Hot Italian sausage
Onion
Canned stewed tomatoes Mexican style
Tomato juice
Canned chili beans
Frozen fire roasted corn
Frozen fire roasted bell peppers
Crushed red chili peppers
Chili powder
Cayenne
Turmeric
Salt
Pepper
EVOO

DIRECTIONS
In a pot saute onions in EVOO with salt and pepper.
Add meat and cook completely.
Add canned tomatoes, frozen veggies, beans (with juice) and tomato juice.
Season with spices to your taste.
Let simmer for 20 minutes to let all the flavors combine.

Serve topped with sour cream (or non fat plain Greek yogurt if your watching calories), green onions and shredded cheddar cheese.

Corn bread is also a must!

Semi-Sweet Chocolate Chip Cookies

Walker and I had only been together a few weeks when he finished his second year of law school.  I wanted to get him something to congratulate him and show him how proud of him I was, but we hadn’t been dating very long so I didn’t want to get him anything too over the top. I decided that making him cookies would be a sweet gesture but not too aggressive. We had planned a date night to celebrate and the entire day before I was telling him how excited I was to give him his gift. When he came over to pick me up for our date, I realized I had way over sold the whole “gift” thing. Thankfully, he didn’t feel that way and we can laugh about it now. They’ve quickly become his favorite (and his roommates’). He loved the cookies and now I make them for him all the time.
